Put all ingredients in your Kitchen-Aid bowl or food processor and mix until the dough starts to clump together. You can also mix the dough by hand. Scoop the mixture out onto a pastry board or work surface and knead briskly for form a dough. Leave the dough to rest for about 30 minutes in a cool place (but preferably not in the fridge, little too cold!).
Set the oven to 175 °C. Roll the dough into balls approximately 3 cm in diameter and put them on an oventray lined with baking paper. Flatten the balls with a fork, leaving in the center of the oven for approximately 12 minutes.
